Organic Garden of Eatin’
We have a small vegetable garden that Charlie loves to tend. This year he made it a little bigger than last year and because of our composting throughout the winter, it has been quite successful. [Side note: Our composting technique is really fun. We open our patio door and toss fruit and veggie remains over the fence. Our aim is quite impressive.]
I am amazed every time I see a new veggie forming. I’m going to take you on a virtual tour of our garden.
When we own (instead of rent) a house, Charlie is determined to make our entire front yard a garden filled with delicious edibles. For now we are happy to supplement our grocery purchases with what we pick. For lunch today I picked some radishes and dill to put in a deliciously raw apple salad.
Radish and Apple Salad
with Lemon Dill Dressing
I adapted this recipe from one my mom clipped out of the AJC.
Salad:
• 1 bunch lettuce or greens (I used arugula), washed and torn into bite-sized pieces
• 8 radishes, thinly sliced
• 1 large apple, cored and sliced into thin wedges
Dressing:
• juice of 1 lemon
• ¼ cup olive oil
• 1 teaspoon agave or raw honey
• 1 tablespoon finely chopped fresh dill
• salt and pepper to taste
Arrange salad on plate. Combine dressing ingredients in a small bowl and whisk together. Drizzle over salad.
Delightfully Raw 
I heard somewhere that organic gardens were elitist. and caused obesity. and famine.
This is awesome! Our garden box is still waiting patiently to have our starter trays transplanted in after a cold cold Michigan spring.
Do you have any tips on keeping animals out? Last year we had several excellent tomatoes and peppers which were sniped by some devilish yard dweller the moment they were ripe for picking. We were very sad.
It’s hard to keep critters away! We have that trouble with our strawberries! An experienced farmer told us that just you have to grow enough for everyone… that or invest in deer netting.
