Ginger snap!

Have I said before that I love raw foods?  So many recipes are extremely easy to make yet delicious and good for you!  Forget processed convenience foods from the store!  Nothing is more convenient than grabbing a piece of fruit when you are in a hurry.  However, if you are in the mood for something a little bit more, here are two simple recipes for your eating pleasure:

Pineapple Ginger Fruit rollup

Put ½ of a pineapple (peeled, cored, chopped), 1 yellow delicious apple (cored and chopped), and fresh grated ginger into your blender.  Depending on how spicy you want your rollup to be, you can add up to 1 tablespoon of ginger.  Spread on a teflex sheet or wax paper and dehydrate for 12 hours or until completely dry.

Chocolate Ginger Macaroons

1 ¾ cups dried shredded coconut (make sure there isn’t any added sugar)
¾ cup hazelnuts, chopped
¾ cup + 2 T raw cocoa powder
¾ cup maple syrup (not a completely raw food, but all natural)
¼ cup + 2 T coconut oil (raw coconut oil is extra virgin, cold-pressed)
1 T ground ginger
1 ¼ tsp vanilla extract
pinch sea salt

Mix all dry ingredients.  Add wet ingredients and mix thoroughly.  Put small scoops onto teflex sheets.  Dehydrate over night.  While it is tempting when your whole house is filled with the smell of macaroons for an entire 12 hours, try not to eat all of them while they are in the dehydrator.
