White Rice or Brown Rice? How about No Rice?

A fourth grader at my school inspired this recipe.  Thanks D!  As always, I am amazed at how delicious a bowl of veggies can taste!  My  husband said we will definitely add this meal to our favorites list.

Mock Fried Rice

Mock Fried Rice
½ head of cauliflower
1 red bell pepper
handful of snow peas
1 carrot
handful of mushrooms
¼ cup onion
Nama Shoyu (raw soy sauce)
Sesame Oil (raw, cold-pressed)
black pepper

Using a food processor, process the cauliflower until it is in small pieces (this will be your rice) and put into a bowl.  Then process the red pepper, snow peas, carrot, mushrooms, and onion to the size you desire.  Mixe with the “rice.”  Drizzle Nama Shoyu and Sesame oil to taste, and add a pinch of black pepper.

    I like to add bean sprouts as well. Make sure you don’t chop them up too much though… same for the snow peas.
