February is for lovers

In honor of Valentine’s Day, I made Heart-Shaped Beet Salad!  I really like raw beets, and they are super cute cut into heart shapes.  The dressing is deliciously sweet and complements the dark leafy greens.

And for dessert?  Chocolate, of course.

Bite Sized Brownies

2 cups almonds or walnuts (soaked 8 hours and drained)
¼ cup cacao powder
¼ cup coconut oil
8 medjool dates, pitted
1 T vanilla
cinnamon to sprinkle on top

Combine all ingredients in the food processor.   Press into a brownie shape.  (I used my silicone mini muffin tray to make mine the perfect bite size.)  Sprinkle with cinnamon or add your own toppings.
