Protein-packed breakfast

Most days my breakfast is a smoothie.  Some days I crave something more.  Here are two breakfast (or snack) ideas that keep me full for hours:

Citrus Maple granola (adapted from Matthew Kenney’s Everyday Raw)

¾ cup maple syrup (not a raw ingredient)
1 apple
2 segments of an orange
2 tsp vanilla extract (alcohol-free)
2 tsp cinnamon
½ tsp salt
1 T orange zest
1 T lemon zest
4 ½ cups total of almonds, walnuts, pecans (soaked 8 hours, drained, and rinsed)
1 cup pumpkin seeds
1 cup raisins
1 cup dried cranberries

Process all ingredients (except nuts, seeds, raisins, and cranberries) in food processor until chunky.  Pour in bowl and set aside.  Chop nuts in food processor until chunky.  Mix syrup mixture, nuts, pumpkin seed, raisins, and cranberries together.  Dehydrate on screens for at least 12 hours or until crunchy.

With this recipe, your food processor magically creates a delicious raw, vegan yogurt!  Top your yogurt with fresh fruit, nuts, and honey!

    we use a national panasonic food processor and this seems to be a bang for the buck-“-
