Who doesn’t love pink ‘n green?

It just so happens that two of my favorite salads are delicious combinations of pink and green.

Kiwi slices and papaya complement each other amazingly well.  Add some raw, unsweetened shredded coconut and raw walnuts, and enjoy a mouthwatering fruit salad.

I love ripe, juicy papaya plain too!  Papaya is an amazing fruit that is bursting with powerful antioxidants, cholesterol level reducing fiber, and digestive aiding enzymes.


Another one of my favorites is Grapefruit, Avocado, and Fennel salad.  Peel and section 3 grapefruits.  Mix with slices from 2 avocados and a fennel bulb.  Drizzle olive oil and lime juice and add sprinkles of sea salt, black pepper, and cracked coriander seeds on top.

Haven’t eaten fennel bulb before?  Fennel bulbs taste a little like licorice and are crunchy like celery.  These bulbs are great sources of health promoting vitamin C, fiber, and potassium.  Don’t leave this tasty ingredient out!
